Ingredients

For the crust (double crust for top and bottom):

  • 2 ½ cups all-purpose flour
  • 1 tsp salt

  • 6–7 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced

  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp butter, cut into small pieces

Optional:

  • 1 egg for egg wash
  • Sugar for sprinkling on top

Instructions

1. Make the crust

  1. In a large bowl, mix flour, salt, and sugar.
  2. Cut in cold butter until mixture looks like coarse crumbs.
  3. Add ice water 1 tbsp at a time until dough holds together.
  4. Divide dough in half, shape into disks, wrap in plastic, and chill for 1 hour.

2. Prepare the filling

  1. Mix sliced apples with sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla.
  2. Let sit while you roll out the crust.

3. Assemble the pie

  1. Roll out one disk of dough to fit your pie pan. Place it in the pan.
  2. Add the apple mixture evenly. Dot with small pieces of butter.
  3. Roll out the second disk for the top crust. Place over apples, seal edges, and cut a few slits for steam to escape.
  4. Optional: Brush top with beaten egg and sprinkle sugar.

4. Bake

  1. Preheat oven to 425°F (220°C).
  2. Bake 20 minutes at 425°F, then reduce to 350°F (175°C) for 40–45 minutes until crust is golden and filling bubbles.
  3. Cool at least 2 hours before slicing to let filling set.
