🍰 Karpatka Cake (Polish Cream Puff Cake)

Karpatka is a famous Polish dessert made with light choux pastry and rich vanilla cream—named after the “Carpathian Mountains” because the top looks like snowy peaks.


🧾 Ingredients

🥯 Choux pastry layers

  • 1 cup water
  • 100 g butter
  • 1 cup flour
  • 4 eggs
  • Pinch of salt

🍮 Vanilla cream filling

  • 2 cups milk
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 2 egg yolks
  • 1 tsp vanilla extract
  • 150 g butter (softened)

1. Make choux pastry

  • Heat water + butter + salt until boiling
  • Add flour all at once, stir until dough forms
  • Cool slightly
  • Beat in eggs one at a time until smooth

2. Bake the layers

  • Divide dough into 2 parts
  • Spread each on baking tray
  • Bake at 200°C (390°F) for 20–25 minutes
  • Cool completely

3. Make vanilla cream

  • Heat milk + sugar
  • In a bowl mix cornstarch + egg yolks
  • Add to milk and cook until thick
  • Cool, then mix in butter + vanilla until smooth

4. Assemble cake

  • Place one pastry layer down
  • Spread cream evenly
  • Top with second layer

5. Chill

  • Refrigerate for 3–4 hours before serving
  • Dust with powdered sugar

  • Don’t open oven while baking (prevents collapse)
  • Cool pastry fully before adding cream
  • Chill overnight for best texture
