I just bought this pack of ground beef from the store yesterday and put it in the fridge. I went to cook dinner and noticed the plastic film is puffed up like a balloon, but the date is still good. What would you do?

I wouldn’t cook that.

A puffed-up or ballooned plastic package of raw ground beef is a strong warning sign, even if the “use by” date is still valid.

🚨 What the swelling usually means

That bloating typically comes from gas produced by bacteria growing inside the package. This can happen if:

  • The meat was contaminated before packaging, or
  • The cold chain was broken (even briefly), or
  • It’s starting to spoil faster than expected

⚠️ Why this matters

With ground beef specifically (more surface area = faster bacterial growth), swelling can be associated with harmful bacteria like those linked to food poisoning.

Even if:

  • It looks “normal”
  • The date is still good
  • It doesn’t smell strongly yet

…it still may not be safe.


👃 Don’t rely on smell alone

Spoiled meat doesn’t always smell bad early on. By the time odor appears, bacteria levels can already be unsafe.

  • ❌ Do NOT cook or taste it
  • ❌ Do NOT try to “cook it thoroughly to fix it”
  • 🗑️ Discard it safely
  • 🧾 If possible, return it to the store and explain the packaging issue

🧊 When meat is actually safe vs unsafe

Safe packaging should be:

  • Flat, vacuum-tight (or normally sealed)
  • No air pockets or swelling
  • No leaking liquid or unusual color

💡 Bottom line

A swollen package = treat it as spoiled, regardless of the date.
