Cloud cake

Cloud cake is a light, airy dessert that’s famous for its soft, fluffy texture—almost like eating a sweet cloud ☁️. It’s often similar to a soufflé or a very delicate sponge cake.


🍰 What is “cloud cake”?

There are a few popular versions, but most share these features:

  • Very light and jiggly texture
  • Made with whipped egg whites (meringue)
  • Low in flour (sometimes no flour at all)
  • Gently baked, often in a water bath

It’s closely related to desserts like Japanese soufflé cheesecake or chiffon cake.


🧁 Simple Cloud Cake Recipe

Ingredients

  • 3 eggs (separated)
  • 3 tbsp sugar
  • 1 tbsp cornstarch (or a little flour)
  • 1/2 tsp vanilla essence
  • 1/4 tsp cream of tartar or a few drops lemon juice
  • Optional: 2 tbsp milk or cream

Instructions

  1. Separate eggs
    • Yolks in one bowl, whites in another
  2. Whip egg whites
    • Add lemon juice/cream of tartar
    • Beat until foamy
    • Gradually add sugar → beat until soft peaks
  3. Mix yolks
    • Add vanilla + milk (optional)
    • Mix until smooth
  4. Combine gently
    • Fold egg whites into yolk mixture
    • Don’t overmix (this keeps it airy!)
  5. Bake
    • Pour into a small pan
    • Place pan in a tray with hot water (water bath)
    • Bake at ~150–160°C for 30–40 minutes

Result

  • Soft, fluffy, slightly jiggly cake
  • Light sweetness
  • Almost melts in your mouth

  • Powdered sugar
  • Fresh fruit
  • A drizzle of Honey
  • Whipped cream
