No-Bake Éclair Cake

A No-Bake Éclair Cake is a classic American icebox dessert that tastes remarkably similar to a cream-filled chocolate éclair but requires no baking. Optional Upgrades

  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 4 ounces softened cream cheese (for extra richness)
  • 1 tablespoon sour cream (adds a slight cheesecake flavor)

For the Layers

  • 1 full box graham crackers (about 14–16 ounces)

Honey graham crackers are traditional, but cinnamon graham crackers also work well.


Chocolate Topping

Easy Version

  • 1 container (16 ounces/450 g) chocolate frosting

Homemade Chocolate Ganache (Recommended)

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • 1 tablespoon butter

The homemade ganache creates a smoother, richer topping than canned frosting.


Equipment Needed

  • 9 × 13-inch baking dish
  • Large mixing bowl

Step 1: Prepare the Filling

Pour the cold milk into a large bowl.

Add both boxes of instant pudding mix.

Fold in the whipped topping gently with a spatula.

If using vanilla extract or cream cheese, mix them in now until completely smooth.

The filling should be light, fluffy, and thick enough to spread easily.


Step 2: Build the First Layer

Arrange graham crackers across the bottom of the baking dish.

Break crackers into smaller pieces where necessary so the entire bottom is covered.

A complete layer helps the dessert hold together after chilling.


Step 3: Add the Cream Layer

Spread half of the pudding mixture evenly over the graham crackers.

Use an offset spatula to create an even layer.

Try not to move the crackers underneath.


Step 4: Repeat the Layers

Place another full layer of graham crackers.

Spread the remaining pudding mixture over them.

Smooth the top evenly.

Add one final layer of graham crackers.

You should now have:

  2. Vanilla cream
  3. Graham crackers
  4. Vanilla cream
  5. Graham crackers

Step 5: Prepare the Chocolate Topping

Using Store-Bought Frosting

Microwave the frosting for 10–15 seconds.

Do not overheat.

It should become just soft enough to spread without melting the pudding underneath.

Spread evenly over the top layer.


Homemade Ganache

Heat the heavy cream until it just begins to simmer.

Pour it over the chocolate chips.

Let stand for 2 minutes.

Stir until smooth.

Mix in the butter.

Allow the ganache to cool for about 10 minutes before spreading over the cake.


Step 6: Refrigerate

Cover tightly with plastic wrap or a lid.

Refrigerate for at least 8 hours.

For the best texture:

  • 12 hours is excellent.
  • 24 hours is even better.

During this time, the graham crackers absorb moisture and soften into layers that resemble sponge cake.


Serving

Cut into squares using a sharp knife.

Clean the knife between slices for neat servings.

Serve chilled.
