Ingredients (Serves 4)
- 4–5 ripe tomatoes, cut into wedges or thick slices
- ¼ small red onion, very thinly sliced (optional)
- 2 cloves garlic, finely grated or minced
- 2 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar or lemon juice
- 1 tsp flaky sea salt (or to taste)
- ½ tsp freshly ground black pepper
- A pinch of sugar (optional, if tomatoes aren’t very sweet)
- ¼ cup fresh basil or parsley, torn
- Optional: crumbled feta, fresh mozzarella, or avocado
Instructions
- Arrange the tomatoes (and onion, if using) in a serving bowl.
- In a small bowl, mix the garlic, olive oil, vinegar, salt, pepper, and sugar.
- Pour the dressing over the tomatoes and gently toss.
- Let the salad rest for 15–30 minutes at room temperature. This is the “magic” step—the tomatoes release their juices, blending with the dressing to create an intensely flavorful sauce.
- Add the fresh herbs just before serving and top with feta, mozzarella, or avocado if desired.
