Magic Tomato Salad

Magic Tomato Salad is a simple, flavor-packed tomato salad where a few ingredients transform into a rich, savory dressing as they mingle with the tomato juices.

Ingredients (Serves 4)

  • 4–5 ripe tomatoes, cut into wedges or thick slices
  • ¼ small red onion, very thinly sliced (optional)
  • 2 cloves garlic, finely grated or minced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1 tsp flaky sea salt (or to taste)
  • ½ tsp freshly ground black pepper
  • A pinch of sugar (optional, if tomatoes aren’t very sweet)
  • ¼ cup fresh basil or parsley, torn
  • Optional: crumbled feta, fresh mozzarella, or avocado

Instructions

  1. Arrange the tomatoes (and onion, if using) in a serving bowl.
  2. In a small bowl, mix the garlic, olive oil, vinegar, salt, pepper, and sugar.
  3. Pour the dressing over the tomatoes and gently toss.
  4. Let the salad rest for 15–30 minutes at room temperature. This is the “magic” step—the tomatoes release their juices, blending with the dressing to create an intensely flavorful sauce.
  5. Add the fresh herbs just before serving and top with feta, mozzarella, or avocado if desired.

Serving Ideas

  • Serve with crusty bread to soak up the juices.
  • Pair with grilled chicken, fish, or steak.
  • Spoon over toasted sourdough or mix with cooked pasta for a quick meal.

The salad is best enjoyed the day it’s is made, while the tomatoes are juicy and fresh.
