Ingredients (Serves 2–4)

  • 2–4 boneless, skinless chicken breasts
  • Salt & pepper, to taste
  • 2 tablespoons olive oil or butter
  • 4–5 garlic cloves, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of basil, oregano, thyme)
  • Optional: chopped parsley for garnish

Instructions

  1. Prep the chicken
    • Season both sides of the chicken breasts with salt and pepper.
  2. Cook the chicken
    • Heat olive oil or butter in a skillet over medium-high heat.
    • Sear chicken breasts 4–5 minutes per side until golden brown and cooked through.
    • Remove chicken and set aside.
  3. Make the creamy garlic sauce
    • In the same skillet, add minced garlic and sauté for 30–60 seconds until fragrant (don’t burn it!).
    • Pour in chicken broth and bring to a simmer.
    • Reduce heat and stir in heavy cream, Parmesan, and Italian seasoning. Simmer 3–5 minutes until sauce thickens slightly.
  4. Combine and serve
    • Return chicken to the skillet, spoon sauce over the top, and cook 2–3 minutes to warm through.
    • Garnish with parsley and extra Parmesan if desired.

  • Add spinach or mushrooms to the sauce for extra flavor and nutrients.
  • Serve over rice, pasta, or mashed potatoes to soak up that creamy sauce.
  • For a lighter version, use Greek yogurt or coconut milk instead of heavy cream (slightly different taste/texture).
