🥔 Farmer’s Casserole (Easy & Hearty)

Ingredients

  • 2 cups frozen hash brown potatoes (thawed)
  • 1–1½ cups cooked ham, bacon, or sausage (diced)
  • 1 cup shredded cheddar cheese (or Colby-Jack)
  • ¼ cup chopped onion (optional)
  • 4 large eggs
  • 1 cup milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter or oil (for greasing)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a baking dish (8×8 or similar).
  3. Spread hash browns evenly in the dish.
  4. Sprinkle meat, onion, and cheese over the potatoes.
  5. In a bowl, whisk eggs, milk, salt, and pepper.
  6. Pour egg mixture evenly over everything.
  7. Bake 40–45 minutes, until the center is set and the top is lightly golden.
  8. Let rest 5 minutes before serving.
