Cheesy Sausage Biscuit Muffins

These savory muffins combine fluffy biscuit dough, breakfast sausage, and melted cheese—great for a quick breakfast or snack.

Ingredients

  • 1 pound (450 g) breakfast sausage
  • 2 cups biscuit mix (such as Bisquick-style mix)
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons melted butter (optional, for extra richness)
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon black pepper
  • Chopped green onions or parsley (optional)

Instructions

  1. Prepare the oven
    • Heat oven to 375°F (190°C).
    • Grease a 12-cup muffin tin or line with muffin liners.
  2. Cook the sausage
    • Brown the sausage in a skillet over medium heat until fully cooked.
    • Drain excess grease and let it cool slightly.
  3. Make the batter
    • In a large bowl, whisk eggs and milk together.
    • Stir in biscuit mix, cheese, seasonings, and cooked sausage until just combined.
  4. Fill the muffin cups
    • Divide the mixture evenly among the muffin cups, filling each about ¾ full.
  5. Bake
    • Bake for 18–22 minutes, until golden and a toothpick inserted in the center comes out clean.
  6. Cool and serve
    • Let muffins cool for a few minutes before serving.

Tips

  • Add diced bell peppers, jalapeños, or spinach for extra flavor.
  • Swap cheddar for pepper jack, mozzarella, or a cheese blend.
  • Store leftovers in the refrigerator for up to 4 days; reheat in the microwave or oven.
  • These muffins freeze well—wrap individually and thaw when needed.
